Look Out Rachel Ray: The Crab Salad, in less-than 30 Minutes

Tired of the same ol chicken and rice over and over???  Here's a recipe that'll spice things up and it's super easy, inexpensive, healthy AND filling!  It's a #HauteMom take on The Crab Salad.

**A quick note, I "eye" a lot of the ingredients here because it's really hard to screw it up.  Here are loose measurements.  Feel free to make it your own

CRAB MIXTURE

1 package Imitation Crab Meat (chopped)

1 tbsp curry powder

1 tbsp lowfat mayo

1 tsp dijon mustard

5-7 sprigs dill (chopped)

 

SALAD

2 cups of cooked penne pasta - placed in fridge to cool

1 cup frozen peas thawed

2 cups cabbage

1 tsp low cal Italian dressing

EXTRAS

1/4 cup parmesan cheese

Jalepenos (optional)

freshly ground pepper for taste

1 cup Arugula as filler

PREPARATION

In a mixing bowl, add all ingredients under "crab mixture" being sure to chop the crab into small, bite-sized pieces.

In another big bowl (I use a glass serving bowl) mix all 4 ingredients under "salad"  Then add crab salad to that bowl with the penne noodles etc. and mix loosely mix the ingredients together.  Top off with whichever ingredients you choose from "extras"  As mentioned here http://hautemomslife.com/lean-and-green/ I typically throw a handful of arugula into my bowl before adding the crab salad in order to cut calories and benefit from the leafy greens.  I top it off with pepper, parmesan and jalepenos.  There's plenty of salt from the crab meat so salt isn't really necessary here.  Bon appetit Haute Mommies x

Bagel On A String = Genius!

  Haute Mommies, I learned something life-changing today; Beverly Hills Deli, Nate 'N Al doesn't just have the world's best Matzo Ball Soup, they've got the world's BEST bagels...on a string!  Here's the scoop...Years ago, one of their beloved waitresses decided to thread a string though the center of a bagel and present it to every baby who comes through the door as a sort of right of passage.  We experienced it first hand yesterday.  

My girlfriend, Joey and I sat with our delicious little guys for a delicious big meal.  Our waitress, Tina, walked over, a big smile on her face enthusiastic to share "what's in the dough" with our bbs.  At first, I thought hmmmm, a bagel...with a string attached, ummmm am I missing something???  Seconds later after Gibson launched across the table to clobber it, the whole thing made PERFECT sense!  Mommy holds the string while teething-tot explores the bagel in all its glory  Here's the genius in it, there's no chance for the bagel to fall on the floor, the string offers an added element of surprise and interest for the baby...oh yea, it's totally complimentary AND moms can eat in peace and quite, sorta.  Anyway, being the interrogator investigator I am, I had to uncover the story behind this bright idea.  Found out the  Nate 'N Al waitress who came up with the cool concept had sadly passed away BUT her legacy certainly lives on.  

If you know anything about Nate 'N Als, you know it's a serious institution in LA, arguably one of the best delis in the world and a serious celeb hangout.  When it comes to the A-list and Nate N' Als staff, they're like PBJ: smushed together in this beautiful symbiotic relationship  Legend has it, Larry King (who you'l find at the deli every morning, same table without fail) was just one of the celebs to show at up at the waitress' funeral.  Many others attended as well donning a very unique accessory, a bagel strung around their necks.  If that's not love well...The waitress' memory will live on with this incredibly simple but smart invention :) And I'm happy to share it with you.  Try it at home, could make dinner time a lot less messy and more enjoyable. 

 

 

Lean And Green

 

Hey Haute Mommies.  A little tip I want to share with you that I've been trying lately and IT WORKS! It's super easy, will get ya lean, and it's GREEN! #LeanAndGreen So here's the deal.  At your next meal, add arugula lettuce over, under or on the side to cut calories in half AND fill you up.  Think 1 Enchilada (instead of two) + 2 handfuls of Arugula = 1/2 fat and calories and just as much flavor.  

When I cook pasta which is often at home, I take a handful of spaghetti, a handful of arugula on top and finish it off with parmesian cheese and pepper.  It's so simple it almost seems dumb -  but promise this'll help you shed those few extra lbs you can't seem to get rid of.   All you're doing is cutting your portion size in half and replacing the caloric foods with something seriously good for ya...We typically think of Arugula in salads but I suggest introducing it to your diet it as so much more; part of a main dish, a side dish or even as it's own spice/condiment.  Arugula packs a serious flavor punch, wonderfully peppery which enhances the taste of most dishes

On a scientific note, my father the hero, Dr. David Heber, Founding Director of UCLA Center for Human Nutrition, says arugula is a dark leafy green that offers serious health benefits too.  It contains something called Lutein which helps protect from blindness and is exceptional for the brain. Part of the broccoli family, arugula stimilutates enzymes in your liver that help protect against toxins like pestisides and other toxins in our environment.  Dr. Daddy also recommends eating it with literally a drop or two of Extra Virgin Olive Oil to help absorb the benefits of the lettuce.   

So...let us put our favorite lettuce (get it, get it :) on the menu and include it in every meal to come.
