Look Out Rachel Ray: The Crab Salad, in less-than 30 Minutes

Tired of the same ol chicken and rice over and over???  Here's a recipe that'll spice things up and it's super easy, inexpensive, healthy AND filling!  It's a #HauteMom take on The Crab Salad.

**A quick note, I "eye" a lot of the ingredients here because it's really hard to screw it up.  Here are loose measurements.  Feel free to make it your own

CRAB MIXTURE

1 package Imitation Crab Meat (chopped)

1 tbsp curry powder

1 tbsp lowfat mayo

1 tsp dijon mustard

5-7 sprigs dill (chopped)

 

SALAD

2 cups of cooked penne pasta - placed in fridge to cool

1 cup frozen peas thawed

2 cups cabbage

1 tsp low cal Italian dressing

EXTRAS

1/4 cup parmesan cheese

Jalepenos (optional)

freshly ground pepper for taste

1 cup Arugula as filler

PREPARATION

In a mixing bowl, add all ingredients under "crab mixture" being sure to chop the crab into small, bite-sized pieces.

In another big bowl (I use a glass serving bowl) mix all 4 ingredients under "salad"  Then add crab salad to that bowl with the penne noodles etc. and mix loosely mix the ingredients together.  Top off with whichever ingredients you choose from "extras"  As mentioned here http://hautemomslife.com/lean-and-green/ I typically throw a handful of arugula into my bowl before adding the crab salad in order to cut calories and benefit from the leafy greens.  I top it off with pepper, parmesan and jalepenos.  There's plenty of salt from the crab meat so salt isn't really necessary here.  Bon appetit Haute Mommies x
