5 Day Food Challenge

 

It's so easy to fall into a cooking rut.  Same 5 meals night after night until spaghetti and tomato sauce feels more like a bad relationship, something you keep going back to but can no longer stomach.  Well, it's time to breakup with your pasta and sauce even if it feels impossible.  Despite what you may think, there ARE plenty more fish in the sea.

Haute Moms Club, it's time to try something new!  This week, I challenged myself to 5 days of new recipes, kicking off with a healthy twist on an Italian Classic, Eggplant Parmesan. It popped out of the bottom oven- looking every bit Top Chef!  Crispy from the panko bread crumbs, cheesy from the buffalo mozzarella and parmesian and seriously hearty, a perfect dish for fall.

If that's not enough, my hubby full on fist-bumped me to share his approval. That does not happen every night.  So kuddos!  I paired our eggplant with veggie meatballs from www.traderjoes.com for a little protein boost and a ridiculously deelish, fairly priced ($13) glass of white wine. Ladies,  I now challenge you: 5 nights of creative, new meals for you and your family. They don't have to be expensive, or time consuming, but they should be different and damn tasty!  And if you, like me, have a crying baby in the background, just pause, for a small breastfeeding break. Active Time: 25 minutes,   Total Time: 1 hour 10 minutes

2 eggplants, (about 2 pounds total) 3 egg whites 3 tablespoons water 1 cup fine dry breadcrumbs 1/2 cup freshly grated Parmesan cheese, (1 ounce), divided 1/2 teaspoon salt 1/2 teaspoon freshly ground pepper 1/4 cup slivered fresh basil leaves 2 1/2 cups tomato sauce 3/4 cup grated part-skim mozzarella cheese, (3 ounces)

PREPARATION Preheat oven to 400°F. Coat two baking sheets and an 8-by-11 1/2-inch baking dish with nonstick cooking spray. Cut eggplants crosswise into 1/4-inch-thick slices. Whisk egg whites and water in a shallow dish until frothy. Combine breadcrumbs, 1/4 cup of the Parmesan, salt and pepper in another shallow dish. Dip the eggplant slices into the egg-white mixture, then coat with the breadcrumb mixture. (Discard any leftover breadcrumbs and egg white.) Arrange the eggplant slices in a single layer on the prepared baking sheets. Bake for 15 minutes, turn the eggplant slices over, and bake until crisp and golden, about 15 minutes longer. Stir basil into tomato sauce. Spread about 1/2 cup of the sauce in the bottom of the prepared baking dish. Arrange half of the eggplant slices over the sauce, overlapping slightly. Spoon 1 cup of the remaining sauce over the eggplant and sprinkle with half of the mozzarella cheese. Add a layer of the remaining eggplant slices and top with the remaining sauce, mozzarella and Parmesan. Bake, uncovered, until the sauce bubbles and the top is golden, 15 to 20 minutes.

I LOVE YOU GENE SIMMONS

I seriously ♥ Gene Simmons and I didn't even know it.  Yup, the tongue flinging, face-painted Kiss frontman impressed me in a way I haven't been in some time by offering up, get this, business advice in a Today Show interview this morning.  First off, he's a member of the tribe who's Mother survived the Holocaust.  All four of my grandparents were/are survivors so I immediately feel a connection.  But it's the insightful knowledge he drops in this 4 minute interview that EVERY Haute Mom should listen to.  Compelling, inspiring, and a true champion of women.  Hats off, dude!

Best-Dressed Star...Ever?!

Prego or not, it doesn't get more sizzling than Mrs. Ryan Reynolds! Blake Lively works it out, yet again this week with her stunning red-carpet getup at last night's 2014 Angel Ball in NYC.  Gorgeous Gucci gown √, plunging neckline √, dazzling smile √, INSANELY hot arm candy √√√ !!!  It's good to be Blake Lively.  And you know what, she deserves it. Couldn't be sweeter.  She's always lovely in interviews, no arrogance, no front - so let's raise our glasses!  Here's to Haute Moms Club IT girl, Blake Livley and her beautifully charmed life!

Honorable mention: Kate Middleton, also best-dressed this week.  Blake is just that good.  I mean, Royalty takes a back seat to her.  Still, the always beautiful and effortlessly chic, Kate Middleton in Alexander McQueen.  I feel for you girl.  Morning sickness is a BITCH!  I still have nightmares.  Get well soon xxx

 

Best Friend's Wedding, Meet, New Mom

My best friend's wedding was last weekend.  It was like nothing I've seen in my life!  Hipper than any Hollywood soiree, guests as beautiful as seen on any red carpet, and more tasteful than the sweetest of Kardashian weddings.  I only know that because I was at both - well, sort of.  I reported from Kim K's wedding to Kris Humphries (remember that!?) and actually attended my friends nuptials.  So lemme just say, this wedding was SENSATIONAL without being over-the-top and that, in my opinion, is hard to do.  450 guests, 3 nights of wild parties, 1 Sunday brunch, followed by an open house complete with food trucks and every dessert you could possibly imagine.

The Venue: La Qunita, California, better known as Coachella - yup, where all the kids go once a year to get high, listen to music and compare rompers and flower crowns (puke)  This weekend, the air was warm, decor- romantically chic, with a perfect mix of wood accents and beautiful, pastel floral arrangements.  Every "T" was crossed, every "I" dotted thanks to a specific vision from a stylish bride, executed by her amazing Mama and her party planner.  Our bridesmaids dresses perfectly matched the romantic mood and the men were dapper in black tuxes.  The bride and groom were stunning and all I could keep thinking??  It's wonderful to be alive.

I also learned a lot this weekend.  Midwesterners choose Vodka over just about anything, diamond rings can closely resemble like ice-skating rings, and babies are the only real ones in charge.  From the moment I stepped foot on that hot desert ground, it hit me, things will never be way they used to be, but change is a beautiful thing.  So while my best friend has entered into this new phase of life, as a married woman, I'm embracing all the changes in my own world, as a Haute New Mom.  Here are my Top 10 Reasons why life as a new mom changes everything.

10. Anything after 9pm feels like 2am

9.  "I'll meet you at the pool in 10" turns into Hubby, baby, puppy, stroller and a trail of shit following, rolling in an hour late looking more like The Griswolds than The Gorelicks

8.  7am is sleeping in

7.  Two shots of Kettle One means 2 bottles of hard-earned breast milk, pumped and dumped

6.  A call to Mom watching a fussy baby is to say I'll be home early, not late

5.  "Padding your bra" takes on a whole new meaning...to protect the world from leaky nipples

4.  Taking the "early" bus home means you're the youngest by 20 years.  In fairness, it was after 1am.

3.  A trip to the bathroom means just that.

2.  Water is the new Vodka

1.  When your baby wants food, your baby gets food.  Even if you have to strip down in the lobby in front of the entire bridal party to feed the little monster.
